SPICY SESAME ZOODLES

Cold sesame noodles used to be a favorite lunch of mine. The sauce traditionally has a sweetener to balance out the heaviness of the almond butter. I’ve opted to leave it out here, but if you prefer, you can add ½ packet of stevia to the dressing as you whisk it together in the bowl !

INGREDIENTS

1/2 lime

1/4 cup creamy almond butter

1 tablespoon soy sauce

1 tablespoon sesame oil

1/2 teaspoon red pepper chili flakes

Sea salt to taste

1/2 cup shredded red cabbage

Handful of fresh cilantro, leaves and stems chopped

2 scallions, chopped

1/3 cup sliced almonds

Zoodles

HOW TO MAKE SPICY SESAME ZOODLES

Here are the step-by-step instructions for preparing spicy sesame zoodles,,,ready in just 4 simple steps!

Juice the lime into a deep bowl.

Add the almond butter, soy sauce, sesame oil, and chili flakes to the bowl.

Season with salt. Whisk until well blended.

Add the cabbage, cilantro, scallions, almonds, and Zoodles to the bowl. Toss to coat. Serve immediately, or chill before serving.
