MOUNTAIN MAN BREAKFAST

We love this breakfast all year round but as one of our winter camping recipes, it is really nice because it is so cheerful and warm.Mountain Man Breakfast Dutch oven camping recipe is fast, easy and Loving! We’ve tried so many recipes that just didn’t hit the mark because they were too dry or potato-heavy so we created our unique version that is meaty,cheesy, more moist and has a little spicy touch of the southwest. Serve it with a toasted English muffin !

INGREDIENTS

10 small red potatoes or (2 pounds frozen hash browns)

1 lb bacon cut into bite-sized pieces

1 white onion chopped

1 lb ground breakfast pork sausage

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

Original Seasoning to taste or salt and pepper

1 roasted poblano pepper chopped

1 red bell pepper chopped

10 eggs divided

HOW TO MAKE MOUNTAIN MAN BREAKFAST
Here are the step-by-step instructions for preparing mountain man breakfast,,,ready in just 7 simple steps!

Heat the oven to 350 degrees F.

Grate the potatoes into a bowl and cover with water. Set aside

Add the bacon to a 12-inch cast iron,or Dutch oven over medium-high heat. Cook until browned, about 4-5 minutes, stirring infrequently. Remove the bacon and place on a paper towel.Leave about 2 tablespoons of bacon grease in the skillet and leave the rest.

Comeback to the skillet and shred in the sausage and cook until it begins to brown about 4-5 minutes, stirring. Stir in the onion, bell pepper and poblano

Drain the potatoes from the water and pat dry with a towel. Stir into the sausage mixture and cook until the onions and peppers are tender, about 4-5 minutes.

Place 6 of the eggs in a medium bowl and whisk until smooth. Pour the eggs evenly over the sausage mixture.Splash the bacon on top. Bake for about 45-50 minutes or until the eggs set up.

Sprinkle the cheeses equally over the top and cook for another 4-5 minutes or until the cheese melts. Crack the remaining eggs on top and bake until the eggs are sunny side up, about 4-5 minutes. Serve warm.
