GUACAMOLE TOPPED SCRAMBLED EGGS

These simple scrambled eggs are combined with a zesty and aromatic guacamole. Perfect for adding a bit of variety to breakfast time or even served as a lunch option with salad.

INGREDIENTS

 3 Raw Egg
 1 avocado
 1 tablespoon Lime Juice, Fresh
 1 tablespoon Olive Oil
 1/4 Salt, Sea Salt
 1/8 Black Pepper
 1 tablespoon Cilantro
 Scallions

INSTRUCTIONS

STEP 1
Peel the avocado and add the flesh to a mixing bowl. Slice the scallion and roughly chop the cilantro and add to the bowl along with the lime juice. Roughly mash together with a fork to combine.
STEP 2
Add the eggs to a mixing bowl with the salt and pepper and beat together.
STEP 3
Heat the oil in a saucepan over a medium heat and add the beaten egg. Leave to settle and start cooking for a moment then scramble with a wooden spoon.
STEP 4
Once the eggs are just cooked to preference, add the guacamole and stir through to serve.
