CHICKEN CAESAR SALAD WITH PARMESAN CRISPS

This salad is a favorite for a few reasons. First, it uses up leftover roast chicken from the recipe in SMOKY BUTTER ROASTED CHICKEN. If you’re craving it but don’t have leftover roast chicken, you can use store bought rotisserie chicken (stick to the herb or plain-roasted ones, since they probably won’t have any added sugars). It’s also an easy lunch to pack for busy weekdays!

INGREDIENTS

¼ cup mayonnaise

1 garlic clove

1 teaspoon freshly squeezed lemon juice

¼ teaspoon soy sauce

½ teaspoon anchovy paste

1 tablespoon Parmesan cheese

¼ teaspoon Dijon mustard

1 bunch romaine hearts, chopped

2 cups leftover Smoky Butter Roasted Chicken

6 Parmesan Crisps
